1.4.  Etymology of Fish plant:

Three major terms are used internationally when referring to the concept of a structure, which processes fish. These terms are fish plant, fish factory and fish processing plant. With ‘fish plant’ being the most widely used term, followed by ‘fish factory’ and then ‘fish processing plant’.

The earliest term of all, fish factory, surfaced back in the nineteenth century and started becoming more popular in the 1880’s. The second term, ’fish plant’, was coined probably in the early twentieth century, around 1920, and rapidly rose to popularity with time. Lastly, in the 1930’s the third term sprang forth: ‘fish processing plant’.

Apart from those three, several other minor synonyms to ‘fish plant’ emerged notably, fish processing facility, fish processing establishment, fish processing factory, and fish factory. It is worth noting that the popularity of a synonym in the fisheries sector, varies with regions.

Fish plant, also known as fish processing plant, fish processing factory, fish processing establishment, fish factory, or fish processing facility, is defined as: an establishment, enterprise, factory, plant, facility or institution located near water bodies, inland or on fishing vessels, carrying out activities related to fish or fisheries products preparation (cleaning, scaling or cutting up), decoration (fish marking, tagging, etc.), preservation ( icing, freezing, irradiating, smokingsalting, cooking, etc.), or packaging (canning, bottling, or wrapping).

Classification of fish or seafood processing factories

Depending on the processes used, fish processing plants/factories can be grouped under the following categories :

  1. Fish preparation factories: all fish factories that seek to make fish neater and easier to work with – usually prior to further processing. They often deal with cleaning, gutting, scaling, trimming, and filleting of fish, fishery products, or seafood as a whole.
  2. Fish transformation factories: factories/plants producing any substance or article from fish through a chemical or mechanical process, changing the physical structure or chemical content of the fish leading to derived and/or by-products. These englobes plants producing fish meal, fish oil, etc.  
  3. Fish decoration factories: any industry/factory/plant that artificially adds items or paintings to the flesh or fins of a fish to alter its appearance or ease its identification. E.g., factories dealing with fish marking, tagging, pin clipping, etc.
  4. Fish preservation factories: factories involved with processes like chilling, icing, freezing, irradiating, smoking, or salting of fish to extend its decay time. These involve cold strores, fishmonger shops, etc.
  5. Fish packaging factories: these are fish processing factories whereby the fish is enclosed from external contact. E.g., fish canning, bottling, or wrapping factories.

Apart from the above categories of fish factories, some fish factories can fall under more than one category. That is the case with fish factories that prepare, transform and package the fish or fishery product, as well as deliver it to the final consumers.
